Ground mustard is simply finely ground mustard seeds. Mustard is widely known for its sharp flavour. This characteristic flavour is an essential component of many dressings and sauces world-wide. Mustard is widely used as a condiment with various foods, particularly cold meats, sausages, and salad dressings. It is also used as an ingredient in mayonnaise, sauces, and pickles. Unlike other "hot" flavours, the flavour profile of mustard does not linger.
Uses & Ideas
Table Mustard - Add Mustard powder to cold water (to form a paste) for 10-15 minutes. Mix in herb vinegar, olive oil and aromatic herbs like Tarragon, Marjoram, or oregano. Mix well, cover and allow flavours to infuse.
Freshly prepared mustard can also be mixed with ground cumin, smoked paprika, black mustard seeds & black pepper to make a spicy paste to rub over joints of Beef, Lamb, Pork, or Chicken prior to roasting.
Mix ground mustard with pureed dried apricots (with water) or diluted apricot jam to make a glaze for Baked Ham.
Mustard, Chive & Parmesan Scones - Preheat oven to 220C. Combine 2 cups flour, 1 tsp sugar, 2 tsp baking powder, 2 tsp ground mustard, ½ tsp salt, ¼ tsp cayenne, ¼ cup chopped chives, and ½ cup grated Parmesan. Combine ¾ cup buttermilk, 2 tbsp melted butter, 2 tbsp olive oil, and add to the flour mixture. Form into a soft dough. Roll out to 2 cm thickness and cut into 4 cm scone shaped rounds. Bake for 10 to 12min.
